A Thanksgiving Recipe Selection
I'm trying out the following recipes (first one is in the oven now); hopefully they will turn out better than the last time I attempted Thanksgiving cookery...
Pecan Roast
1 1/4cupbread crumbs
1cuppecans or walnuts
1/2cupevaporated milk
2wholeeggs
1 1/2cupmilk
2tsponion
1tspsalt
1/4tspsage

Beat eggs. Add all ingredients; mix well. Place in greased pan - Bake @ 350 - 1 hr.
My initial reaction is: "needs Tony C's (or similar seasonings)", but I'll sneak this into dinner tomorrow, and see what happens.

Tomato Loaf
2cupsground beef
1wholemed. onion
1cup corn meal
1/3cupshortening
1tspsalt
2wholeeggs
1cuptomatoes
1tsppaprika
1tsppepper or chili powder

[may substitute 1 can cream-style corn for corn meal]
Fry meat and onions. Add remaining ingredients. Mix Well. Bake in greased loaf pan, 350 x 30 min.
This one, I'll wrap tonight and nuke tomorrow, because I'll be using my loaf pans for...
Chocolate Pound Cake
2sticksbutter
1/2cupshortening
6wholeeggs
3cups flour-sifted
1/2cup cocoa
3cups sugar
1cupmilk
2tspvanilla
1/2tsp baking powder
1 pinchsalt

Cream butter and shortening - add sugar gradually. Add eggs one at a time. Sift flour, salt, cocoa & baking powder; add to mixture alternately with milk and vanilla. Bake in 10" tube pan - 325 x 1 1/2 hours.
If there's some reason why I don't either make it to sister's place for Thanksgiving, or leave sister's place before Saturday, this cake would be it. The only thing missing from this recipe is bacon, and if I were worthy, I'd use bacon grease for the pans.
